More Easy Cake Recipes
Many of these recipes start with a boxed cake mix making them perfect for beginners and experienced
bakers alike!
Basic Yellow Cake (from scratch)
2 1/2 cups all-purpose flour
1 3/4 cup sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/3 cups milk
1/2 cup softened butter or margarine
2 teaspoons vanilla
3 eggs
Preheat oven to 350 degrees. Combine flour, sugar, baking powder and salt in a large bowl. Then add
milk, butter and vanilla and beat at low speed for about 30 seconds or until well blended. Beat at high
speed for 2 minutes scraping the sides of the bowl often. Add the eggs and beat for 2 more minutes.
Grease and flour the bottoms and sides of your cake pans and pour in batter. Bake 30-35 minutes for
smaller round or square cakes and 35-40 minutes for a larger rectangular cake. A cake is done when a
toothpick inserted in the center comes out clean. Cool cakes in the pans on a wire rack for 10 minutes
then remove the cakes from the pans and cool completely on wire rack before decorating.
Basic Chocolate Cake (from scratch)
1 2/3 cups all-purpose flour
2 cups sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1/2 cup vegetable shortening
1 teaspoon vanilla
3 eggs
Preheat oven to 350 degrees. Combine flour, sugar, cocoa, baking powder, baking soda and salt in a
large bowl. Then add buttermilk, shortening and vanilla and beat at low speed for about 30 seconds or
until well blended. Beat at high speed for 2 minutes scraping the sides of the bowl once in a while. Add
the eggs and beat for 2 more minutes. Grease and flour the bottoms and sides of your cake pans and
pour in batter. Bake 30-35 minutes for smaller round or square cakes and 35-40 minutes for a larger

Red Velvet Cake (from a cake mix)
2 boxes of french vanilla or white cake mix
2 cups of all purpose flour
2 cups of granulated sugar
1 and 1/2 teaspoons of salt
1 cup of Ghiradelli sweet ground chocolate (or 1 cup of chocolate cake mix)
2 and 2/3 cups of water
1/4 cup of vegetable oil
2 teaspoons of vanilla extract
2 cups (16 oz) of sour cream
6 eggs
1 jar (1 oz) of Wilton's no-taste red food coloring
Place all the dry ingredients together in a large mixing bowl and blend together. Add the remaining
ingredients and mix at medium speed for about two minutes. Place the batter into your greased baking
pans and bake at 325 until a toothpick comes out clean. This recipe will make two 8 inch rounds plus two
6 inch rounds for a small two tier cake. Has a wonderful and rich red color!
Lemon Cake (from a cake mix)
1 box of Duncan Hines white cake mix
1 cup of all purpose flour
1 cup of granulated sugar
1 box of Jell-O brand instant lemon pudding mix
1/2 teaspoon of salt
4 eggs
1 and 1/3 cups of water
2 tablespoons of vegetable oil
1 cup (8 oz) of sour cream
1 teaspoon clear vanilla extract
2 teaspoons lemon extract
Zest and juice from 2 large lemons
You can place all the ingredients into a large bowl at one time and mix for 2 minutes. Scrape the sides
and bottom of the bowl and mix for an additional minute. Pour into greased cake pans and bake in a 325
degree oven until a toothpick comes out clean.
Orange Cake (from a cake mix)
1 box of Pillsbury white cake mix
1 small package of orange gelatin
1/2 cup of milk
1/2 cup of vegetable oil
1/2 cup of orange juice
4 eggs
2 teaspoons of baking powder
1-2 teaspoons of orange extract
Combine the cake mix, orange gelatin, oil and milk. Start your mixer then begin adding the eggs one at a
time. Then add the orange juice while the cake is still mixing. Finally mix in the baking powder and
orange extract. Pour the batter in your greased cake pans and bake at 325 degrees for 25-30 minutes
or until a toothpick comes out clean. This one is really good with a cream cheese frosting!
Carrot Cake (from a cake mix)
1 box of yellow cake mix
1 package of vanilla pudding mix (3.4 oz)
1/2 cup of fresh orange juice
1/2 cup of vegetable oil
1 cup of sour cream
4 eggs
2 teaspoons cinnamon
3 cups of grated carrots
1/2 cup of raisins
1/2 cup of chopped walnuts
Combine all of the above ingredients in a bowl and blend with an electric mixer for 1 minute on a low
setting. Increase the speed to medium and blend for 2 more minutes. The batter will be thick so don't be
concerned if it doesn't pour like a regular cake mix. Divide into your greased cake pans and bake at 325
degrees for 45 minutes or until a toothpick inserted into the center comes out clean.
