I've tried a lot of recipes and have pulled together a collection of those that are most popular among kids
and are also easy to make!

Marshmallow Fondant - Easy to Make, Fantastic to Work With & Cheap!

1 cup mini marshmallows
1 tablespoon water
1 1/2 cup powdered sugar (sifted)

Add the water to the marshmallows and microwave for about 20-30 seconds.  Stir well until the mixture
becomes like a syrup.  Add the powdered sugar and mix well.  Coat your hands and your work surface
with a light layer of vegetable shortening (Crisco).  Knead the fondant until it is smooth.  If the fondant is
too sticky just add more sugar or if it's too dry add a little more water.  It's now ready for use!  (For a
large batch use a 16oz bag of mini marshmallows, 2 tablespoons of water and 2 lbs of powdered sugar.)

Royal Icing

1 egg white at room temperature
2 to 2 1/2 cups of powdered sugar (sifted)
1/2 teaspoon almond extract

Beat egg white in a small bowl at high speed with an electric mixer until foamy.  Gradually add the
powdered sugar and almond extract.  Beat at low speed until moist.  Increase mixer speed to high and
beat until the icing is stiff.  It's now ready to use!

Basic White Cake (from scratch)

2 1/2 cups all-purpose flour
1 3/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups milk
1/2 cup vegetable shortening
2 teaspoons vanilla
4 egg whites

Preheat oven to 350 degrees. Combine flour, sugar, baking powder and salt in a large bowl. Then add
milk, shortening and vanilla and beat at low speed for about 30 seconds or until well blended. Beat at
high speed for 2 minutes scraping the sides of the bowl once in a while. Add the egg whites and beat for
2 more minutes. Grease and flour the bottoms and sides of your cake pans and pour in batter. Bake
30-35 minutes for smaller round or square cakes and 35-40 minutes for a larger rectangular cake. A
cake is done when a toothpick inserted in the center comes out clean. Cool cakes in the pans on a wire
rack for 10 minutes then remove the cakes from the pans and cool completely on wire rack before
decorating.
